Universities organize their processes to accomplish quality education, which is reflected through documented information. In this sense, fieldwork by consultants is required for its design and updating when process actors lack the competencies to do so. The objective in this study was to deploy a methodology for designing documented information on university processes based on fieldwork. Given the nature of this method, a mixed-methods approach with a qualitative predominance was followed, complemented by analysis and synthesis of information, document review, participant observation, interviews, and inferential statistics. As main result a methodology was proposed, which was applied at the University of Holguín since 2022, enabling the design of documented information for six processes, and achieving positive documentation indexes. The conclusions showed how this tool improves process-oriented organizing, aligned with quality evaluation and accreditation.
